Sandwiches

Almond Chicken Salad
4 pounds chicken breasts, cooked and shredded
1/2 container sprouts, cut in thirds
1/2 purple onion, finely chopped
1 cup finely chopped celery (optional)
mayonnaise, enough for your liking
salt, pepper to taste
2 handful chopped cashews
croissants

Mix all ingredients together in large bowl except for the nuts. Chill at least one hour; stir in nuts just  before serving. P.S. You can use cashews instead of almonds.


The Best Street Philly Cheesesteaks
4-6 hoagie rolls
1 tablespoon butter
1 thin sliced green pepper
1 thin sliced sweet onion
8 oz. fresh mushrooms, sliced
1 tablespoon butter
2 pounds thin sliced sirloin or ribeye
salt and pepper to taste
4 tablespoons butter
provolone cheese

Slice the rolls and place each one on its own individual piece of foil, big enough to wrap sandwich. Preheat oven to 250.  Place 1 tablespoon of butter in a hot frying pan over medium heat. add pepper, onions, and mushrooms. Saute until vegetables are tender. Remove vegetables; put them on a plate. Melt the next tablespoon of butter in the same frying pan. Cook meat in butter until no longer pink. Season with salt and pepper. Turn off heat; stir in vegetables. Divide the meat mixture into four or six (depending on how many rolls you have). Place heaping portions on each roll; top with a slice of cheese and wrap each sandwich tightly in foil. Place in the oven for 15-20 minutes. Serve!


JDawgs Sauce
1/2 cup ketchup
1/4 cup barbeque sauce
2 teaspoons cider vinegar
1 teaspoon garlic salt
1/4 teaspoon pepper
1/3 cup honey
1/2 teaspoon paprika

Mix all ingredients in a small saucepot; bring to a boil, stirring constantly. Serve over criss-cross cut all beef hot dogs topped with sweet diced onion, mustard, ketchup, relish, jalapenos, cheese, tomatoes, dill pickles, etc.



Grilled Reubens
butter
1 loaf texas toast (or other white bread)
1 cup thousand island dressing
1 jar saurkraut, drained
2 pounds corned beef or ham, thin sliced
sliced swiss cheese

Butter one side of two slices of bread; place one down on a hot griddle. Spread some thousand island on the bread; place saurkraut, corned beef or ham, then swiss on the bread; spread more thousand island on the second slice of bread. Place on top of the sandwich. Grill till both sides of the sandwich are golden brown and the cheese is melted.



Old Fashioned Sloppy Joes - Classic.
2 pounds ground beef
1 large chopped onion
1 large green pepper, chopped
1 28 oz. can petite diced tomatoes
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon worcestershire sauce
1 tablespoon steak sauce
1/2 teaspoon garlic salt
1/2 teaspoon ground mustard
1/4 teaspoon paprika
hamburger buns

Brown beef with onion and pepper; season with salt and pepper to taste. Add remaining ingredients; mix well and simmer 30 minutes, stirring occasionally. Serve on warm buns.


Pioneer Woman Sloppy Joes

2 tablespoons butter
2 pounds hamburger
1 onion, diced
1 green pepper, diced
4 cloves garlic, minced
1 1/2 cup ketchup
1/2 cup water
2 tablespoons brown sugar
2 teaspoons chili powder
1 teaspoon dry mustard
1/2 teaspoon crushed red pepper flakes
1 teaspoon worcestershire
1 small can tomato paste
salt and pepper to taste
hamburger buns or rolls (and more butter)

Add butter to a large sauce pot; add hamburger, onions, pepper and garlic and saute until meat is no longer pink.  Add ketchup, brown sugar, chili powder, dry mustard, red pepper flakes, worcestershire, tomato paste and salt and pepper. Spread rolls with butter on toast on a hot griddle. Serve with plenty of meat mixture on each bun.


Wow! Spicy Sloppy Joes
A new twist on an old classic!

2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
salt and pepper to taste
1 14 oz. can tomato puree
2 tablespoons brown sugar
1 tablespoon cider vinegar
1 small can tomato paste
1 tablespoon worcestershire sauce
1 tablespoon minced jalapenos
1 teaspoon jalapeno juice (from can)
1 handful minced fresh cilantro
2 large avocados
soft hamburger buns

Brown ground beef with onion and garlic; season with salt and pepper to taste. When beef is cooked and onions are soft, add tomato puree, sugar, vinegar, tomato paste, worcestershire sauce, and  jalapenos. Reduce heat and simmer 30 minutes. Remove from heat then stir in cilantro. Place heaping portions of the meat on warmed buns. Top with sliced avocado slices, top bun and serve!



Sweet and Spicy Turkey Sloppy Joes
On onion cheese buns. . . yes!

2 tablespoons oil
2 pounds ground turkey
2 large onions, coarsely chopped
4 garlic cloves, minced
1 teaspoon cumin
2 teaspoons oregano
1 teaspoon salt
1/2 teaspoon pepper
2 bottles heinz chili sauce
1 medium jalapeno, minced
1 tablespoon worcestershire sauce
1 teaspoon paprika
onion cheese buns, warmed and sliced

In saucepan or skillet, brown turkey in oil, breaking up into very small pieces. Add onions and continue to cook until tender. Add garlic, cumin, oregano, salt and pepper. Stir well. Add chili sauce, jalapeno, worcestershire, and paprika; bring to a boil. Simmer at least thirty minutes. Serve on warm, split rolls.



Tangy BBQ Beef Sandwiches
1 large onion, chopped
2-4 pound chuck or cross-rib roast
1 cup ketchup
1 cup BBQ Sauce
2 tablespoons vinegar
2 tablespoons worcestershire sauce
2 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
hamburger or kaiser buns

Place onion and roast in crock pot. In a separate bowl combine ketchup, BBQ sauce, vinegar, worcestershire, brown sugar, chili powder, salt and pepper, and garlic powder. Pour over meat and cook on high 4-6 hours or low 6-8. Shred meat with a fork and serve on warmed buns or rolls.



Pulled Pork Sandwiches with Cilantro Jalapeno Slaw
From the Pioneer Woman . . . no less!

1 sweet onion, quartered
1 2-4 pound pork butt or other boneless roast
1 teaspoon salt
1/2 teaspoon pepper
1 11 oz. can chipotle peppers in adobo
2 cans Dr. Pepper or Coke
2 tablespoons brown sugar
1 bag coleslaw
1/2 purple cabbage, thinly sliced
1 whole jalapeno, minced
1 whole bunch cilantro, chopped
1/2 cup whole milk 
1/2 cup  mayonnaise
1 teaspoon vinegar
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon cayenne
2 cubes butter
12 crusty rolls 

Place onions and pork roast in crock pot. Season with salt and pepper. Pour whole can of chipotle peppers along with the sauce over the roast. Pour soda around the sides. Sprinkle the brown sugar over the top. Cover and cook on high 4-6 hours or low 6-8. When meat starts falling apart; shred and return to pot to keep warm. While meat is cooking make the slaw since you want it to sit for a while before you use it . To make the slaw toss together the package of slaw, purple cabbage, jalapeno and cilantro, In a separate bowl whisk together milk, mayo, vinegar, sugar, salt and cayenne. Pour over slaw and let it sit to blend the flavors. Serve on buns spread with butter and grilled to a golden brown on a hot skillet. Use about twice as much slaw as meat!



Classic Southern Pork and Slaw
The original.

3 tablespoons cider vinegar
4 teaspoons sugar
2 teaspoons oil
1 teaspoon dijon mustard
1/2 teaspoon celery seeds
1/2 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1  bag coleslaw (or 2 cups shredded green cabbage)
4 green onions thinly sliced 
1-2 pound pork tenderloin or other boneless roast
1/2 teaspoon each garlic salt, pepper, cayenne, chili powder and onion powder
1 cup BBQ sauce
kaiser rolls or hamburger buns

Slaw: whisk together first 8 ingredients. Add coleslaw or cabbage and onions and toss.

Place pork in crock pot with 1/4 cup water; combine all spices and dry rub into roast; cook on high 4-6 hours or low 6-8. When meat is tender, shred and return to crock pot along with 1 cup BBQ  sauce. Serve sandwiches by placing generous amounts of pork on the bottom bun along with a generous amount of coleslaw.



BBQ Meatball Sandwiches
1-2 pounds ground beef
1 large egg
1 cup bread crumbs
1/4 cup milk
1 minced garlic clove 
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons worcestershire sauce
1 bottle BBQ sauce
hoagie rolls 

In mixing bowl combine hamburger, egg, bread crumbs, milk, garlic and spices. Combine and form into balls with a cookie scoop. Place on cookie sheet and bake 15-20 minutes. Place meatballs on warmed hoagies and top with BBQ sauce.



Hot Dog Buffet
Lots of toppings and suggestions for a big selection. Fun idea for a party!

1. Saurkraut and bubble mustard along with carmelized onions!

2. Fresh chopped tomatoes, pickled hot peppers, and a dill pickle spear.

3. Chili, mustard, cheddar cheese and chopped sweet onions.

4. Always relish and of course jalapenos.



Pot Roast Sandwiches
2-4 pound chuck or cross-rib roast
2 cups water
2 beef bullion cubes
1 clove garlic, minced
1/2 teas salt
1/2 teaspoon pepper
2 large onions, sliced in half-rings
crusty rolls 
sliced swiss or provolone cheese

Place first six ingredients in crock pot and cook 4-6 hours on high or 6-8 hours on low. When meat is done, shred and return to crock pot. Meanwhile, carmelize sliced onions in butter or oil. Make sandwiches by spreading mayo on both sides of the bun, layer meat, onions and cheese.



Spicy Italian Beef Sandwiches
3 pounds cross rib or chuck roast
1 packet lipton onion soup mix
1 sweet onion, sliced
2 large jalapenos, minced
2 tablespoons italian seasoning
3 cups beef broth
provolone cheese, sliced
hard crusty rolls

Place roast in crock pot along with soup mix, onion, jalapenos, italian seasoning and broth. Cook on high 6-8 hours. Shred meat; serve on rolls topped with provolone cheese.




Monte Cristo Sandwiches
2/3 cup water
1 egg
2/3 cup all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
8 slices white bread
4 slices Swiss cheese
4 slices turkey
4 slices ham
1/8 teaspoon ground black pepper
1 tablespoon confectioners' sugar for dusting
oil for frying, or as needed

Heat 5 inches of oil in a deep-fryer to 365 degrees F (180 degrees C). While oil is heating, make the batter: In a medium bowl, whisk together the egg and water. Combine the flour, baking powder, salt and pepper; whisk into the egg mixture until smooth. Set aside.

Assemble sandwiches by placing one slice of turkey on one slice of bread, a slice of ham on another, then sandwich them with the Swiss cheese in the middle. Cut sandwiches into halves or quarters which ever you prefer, and secure with toothpicks. Dip each sandwich quarter in the batter so that all sides are coated. Deep fry in the hot oil until golden brown on all sides. Remove toothpicks and arrange on a serving tray. Dust with confectioners' sugar just before serving. Note that many people like this sandwich served with a side of raspberry jam on the side for dipping or spreading ...




Cajun Chicken Club
1-2 pounds breaded chicken  tenders, cooked
1 teaspoon cajun seasoning
swiss cheese, sliced
creamy parmesan dressing
tomatoes, onions, lettuce
bacon slices, cripsed
hoagies or steak rolls

Place cooked chicken tenders on a crisped hoagie or roll. Sprinkle chicken with a bit of cajun seasoning. Place cheese over chicken while still hot then top with salad dressing, tomatoes, lettuce, onions, and bacon.



Chicken Quesadillas with THE SAUCE
1/2 cup mayonnaise
4 tablespoons minced jalapenos
4 teaspoons jalapeno juice (from can)
2 teaspoons sugar
1 teaspoon paprika
1 teaspoon cumin
1/4 teaspoon cayenne
1/4 teaspoon garlic powder
1 dash salt
butter
1 pound shredded cooked chicken, seasoned
1 pound shredded cheddar cheese
flour tortillas

Combine mayo, jalapenos and juice, sugar, paprkia, cumin, cayenne, garlic and salt; mix to make sauce. Set aside.  Melt a little butter on a hot skillet. Place a tortilla on the butter and top with plenty of cheese and some chicken. Place another tortilla on top. Cook until the bottom is golden and crisp; flip and crisp the other side. Cut with a pizza cutter into wedges; serve with sauce.


California Steak Sandwiches
1-2 pounds thin sliced steaks
pepper and garlic salt
bleu cheese dressing
crusty rolls 
lettuce, tomatoes and sweet onion

Grill steaks, seasoning with salt and pepper. Place cooked meat on crisped rolls along with lots of salad dressing, lettuce, tomatoes and onions.



Summertime Gyros
1 medium onion, quartered
2 garlic cloves, minced
2 tablespoons sugar
1 tablespoon ground mustard
1/2 teaspoon ginger
1 1/2 teaspoon pepper
1/2 teaspoon cayenne
1/2 cup soy sauce
1/4 cup water
3-4 pounds shaved beef roast or steaks
1 medium cucumber
4 cloves garlic, minced
1/2 teaspoon salt
1/3 cup cider vinegar
1/3 cup olive oil
2 cups sour cream
pita bread (2 bags)
lots of chopped sweet onion
chopped tomatoes

In blender or food processor place onion, garlic, sugar, mustard, ginger and peppers; cover and process until onion is finely chopped. Add soy sauce and water and process till well blended. Place in ziplock bag along with shredded meat and allow to marinade for 1-2 hours. Meanwhile, make cucumber sauce by using the food processor to to combine cucumber, garlic, salt, vinegar, oil and sour cream. Transfer to a bowl then refrigerate until ready to use. To finish, grill meat then place it on a pita half along with cucumber sauce, lots of sweet onion, and chopped tomatoes.



Wrap - Buffalo Chicken
2 pounds breaded chicken tenders, cooked
1/2 cup Tabasco or Frank's Red Hot's
1/4 cup melted butter
flour tortillas
tomatoes, diced
shredded cheddar cheese
shredded lettuce
bleu cheese dressing

In a small bowl, combine hot pepper sauce and butter. Dip cooked chicken tenders into the hot pepper mixture and place in the center of a microwave-warmed tortillas. Layer with tomatoes, cheese, lettuce and salad dressing. Roll, wrap and eat!



Wrap - Chicken Fajita
1-2 pounds grilled chicken breast, sliced
salsa
black beans, rinsed and drained
shredded cheddar or pepper jack cheese
shredded lettuce
flour tortillas
1 cup mayonnaise
4 tablespoons minced onion
4 tablespoons minced tomato
2 tablespoon buttermilk
2 tablespoon white vinegar
4 teaspoons minced fresh cilantro
2 tablespoon diced green chilies
1 teaspoon paprika
1 teaspoon sugar
1/2 teaspoon salt
1 pinch cumin
1 pinch cayenne

Wrap chicken, salsa, beans, cheese and lettuce up in a microwave-warmed flour tortilla. Mix the remaining ingredients together to make a dipping sauce. Dip the sandwich into the sauce, bite by bite.
