One of the most delicious cupcake bites you'll ever eat!
1 box lemon cake mix
1 small box instant lemon pudding
4 large eggs
3/4 cup oil
1 cup water
cream cheese frosting
Mix all ingredients (except frosting, of course) in blender for 2 minutes. Bake as directed on box for cupcakes. Frost with cream cheese frosting. OH AND IT'S A PRETTY GOOD IDEA TO ADD ABOUT A TEASPOON OF LEMON JUICE TO YOUR CREAM CHEESE FROSTING.
2/3 cup butter, softened
2 cup sugar
4 large eggs
2 teaspoon vanilla
1 cup cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cup flour
18 Hershey's Kisses
In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Add dry ingredients, ending with flour. Fill prepared muffin cups two thirds full. Place a chocolate kiss tip ends down, in center of each. Bake at 350 for 20-25 min or until top of brownie springs back when lightly touched, 9 cupcakes.
You can frost these with a buttercream or cream cheese frosting, but they really are quite good alone as they are more like a brownie.
Brownie Rolo Bites with Cream Cheese Frosting
These are so darn good and look very fancy on a plate! So fun to take places.
1 box brownie mix, mixed according to package directions
1 bag rolos, unwrapped
1 cube butter
1 8 oz. block cream cheese
1 teaspoon vanilla
2-5 tablespoon milk
1 2 pound bag powdered sugar
Mix brownies according to package directions. Scoop into mini muffin tins to about half full. MAKE SURE THE MINI MUFFIN TINS ARE SUPER WELL PREPARED AS THESE TEND TO WANT TO STICK! Place one unwrapped rolo into the center of each brownie bite, wide side up. Bake at 350 until done, about 10 minutes. Remove from oven and do not remove until the bites are cool so they will retain their shape. A plastic spoon helps with this process since they will slide in and not damage your non-stick pans. Once removed pipe frosting in a mountain over the top of each bit. To make frosting, cream together butter and cream cheese; then blend in vanilla. Slowly add in the powdered sugar, adding milk to keep the frosting stiff, but not too much so.
Cream Cheese Cupcakes
1 8 oz. package cream cheese, softened
1 white cake mix
1 1/4 cup water
1/2 cup melted butter
3 large eggs
frosting
In mixing bowl, beat cream cheese until smooth. Add cake mix, water, butter and eggs. Mix well. Fill prepared muffin cups half full and bake for about 15 minutes. Cool then frost with chocolate cream cheese frosting.
Chocolate Chip Cupcakes
1 box vanilla cake mix
1 small box instant vanilla pudding
1 cup water
1/2 cup oil
4 large eggs
1 cup mini chocolate chips
chocolate buttercream frosting
Blend cake mix, pudding, water, oil, and eggs for two minutes on medium speed. Fold in chocolate chips. Fill prepared muffin cups half full. Bake for 15 minutes or until barely set. Cool completely then frost. Top with additional mini chips if desired.
Dirt Cakes
1 large bag oreo cookies
2 small boxes instant chocolate pudding
3 1/2 cups milk
2 8 oz. packages of cream cheese
1/2 cup butter
1 cup powdered sugar
Mix pudding and milk. Whisk until well blended and thickening. Mix cream cheese, butter and sugar together in separate bowl, making sure that all lumps are dissolved. Combine pudding mixture with cream cheese mixture by mixing together. Use a deep glass blow and layer cream mixture with cookie crumbs beginning and ending with cookies. Refrigerate at least 3 hours before serving. You can stick gummi worms into the "dirt" just before serving to make it look like a really "dirty" cake!
Aside! I put this recipe in the cupcake section since i think this dessert works best in individual servings, served in little, clear, plastic cups . . . thus, the "cup" cake!
