Oh my goodness!
6 boneless, skinless chicken breasts, pounded to an even thickness
3/4 cup balsamic vinegar
2 tablespoons butter
6 thick slices mozarella cheese
6 -12 tomato slices
6 large basil leaves, optional
Place chicken on grill, seasoned with salt, pepper and italian seasoning. While chicken cooks; make the reduction. To make reduction, pour vinegar into saucepan over medium heat and reduce by half. Stir in butter until smooth; set aside.
Just as chicken is finishing, place a slice of cheese, (a leaf of basil, if desired) and a slice of tomato. Continue to cook until cheese is starting to melt and tomato is softening. Remove from heat and plate. Just before serving, drizzle plenty of the reduction over the top of everything. Serve warm.
